Pineapple and
Salmon Fiesta
What do you need:
4 skin-on salmon fillets
1 1/2 cups chopped fresh pineapple
1/4 onion, chopped
Juice of 3 limes, divided
2 tablespoons extra virgin olive oil
1 tablespoon chopped fresh cilantro
1 teaspoon honey
Kosher salt
Ground black pepper
Mix together pineapple, onion, juice of 1 lime, cilantro, salt and pepper in a bowl. Set aside. Combine juice of 2 limes, oil and honey in a bowl. Brush fillets with mixture then cook on a pre-heated grill over medium high heat for 5 to 6 minutes per side or until cooked through. Allow to cool for a few minutes before serving with pineapple mixture.
Grilled Shrimp Packet Surprise
What you need:
3/4 kilogram shrimp, peeled and deveined
1/4 kilogram red bliss potatoes, chopped into 1-inch pieces
2 smoked sausages, thinly sliced
2 ears corn, sliced crosswise into 4 pieces
1 lemon, cut into thin wedges
2 cloves garlic, minced
4 tablespoons butter
2 tablespoons chopped fresh parsley leaves
2 tablespoons extra virgin olive oil
1 tablespoon Old Bay seasoning
Kosher salt
Ground black pepper
Prepare heavy duty aluminum foil. Divide shrimp, potatoes, sausage, corn and garlic among 4 foils. Place 1 tablespoon of butter in each, drizzle with olive oil then season with Old Bay seasoning, salt and pepper. Top each mixture with lemon wedges and parsley. Fold the foil over mixture to create a packet then cook on a pre-heated grill over high heat for 10 to 15 minutes or until cooked through. Serve immediately.
Quick Grilled Lemon Squid
What you need:
1/2 kilogram squid, cleaned and sliced lengthwise to open flat
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Lemon wedges for garnish
Mix together lemon juice, olive oil, salt and pepper in a large bowl then toss squid in the mixture to coat. Thread onto skewers (thread tentacles in separate skewers if squid is large) then cook on a pre-heated grill over high heat until cooked through, about 2 to 3 minutes per side. Transfer to serving platter, top with parsley and garnish with lemon wedges to serve.
